The EPA recommends one. Its mold guidance says to run the kitchen exhaust while cooking and while the dishwasher runs, to keep moisture down. That matters in a humid climate, where the EPA advises keeping indoor humidity around 30 to 50%. A fan that vents outdoors does that job, while one that only recirculates air does not remove moisture.
Most of the wait is in planning and ordering, since cabinets and countertops have to be chosen, measured, and ordered before anything is installed. Scope sets the rest: new counters and a backsplash make a short job, while new cabinets and a new layout take longer. Pairing the work with hardwood floor refinishing is easiest while the room is empty.
